Week beginning December 13th - Christmas Holidays

Just a short note this week to let you all know we will be closing for Christmas holidays from the 23rd of December up until the 10th of January.

In the meantime and in the lead up to Christmas, the fabulous Jared has created a wonderfully naughty Christmas menu including Champagne and camembert soup and of course the popular Pan forte and his amazing mince pies as well as choclate and blackberry muffins.

We are very much looking forwrad to eating this menu, then having somne time off to recover.....Nice

Week beginning December 6th - Christmas Treats

Now we're talking. It's Christmas, it's Christmas!!!!

We love a good Christmas here at Kaffeine, and as we are all from New Zealand and Australia, having snow and cold weather at this time of year makes it all the more special.(some of our staff saw snow for the first time ever this week!)

Mrs Kaffeine and I especially love being in cold weather at Christmas time, and having friends and family over or staying in a lovely cosy pub/cafe eating great food, with welcoming and warm service and with great friends and family having a laugh. It's brilliant.

So we try to create that atmosphere at Kaffeine, the windows all fog up and you cannot see inside, but when you come in it is toasty warm, the lovely smell of coffee permeates the air and combined with Chef Jared baking all the wonderful regular treats and now the special Christmas treats downstairs, it just makes you feel warm and comfortable all over.

Week beginning November 29th - Waiting times for your coffee

For 4 years I worked at Marylebone Cricket Club as one of the senior managers in the Catering department, and in the functions in the Long Room, we were always looking at ways to get hot plates out to the tables, in as little time as possible, with speed, efficiency, presentation and of course quality on the plate and to the palette. Absolute importance.

At Kaffeine, we take everything we do very seriously as well, just like at the greatest cricket club in the world. As Kaffeine has became busier over the past year, our waiting times for coffee have increased. Of course this is unacceptable, both to us and also to the customers, so we have now invested in a three group espresso machine and now have three baristas working each day. (previously we only had a two group machine and two baristas, and wait times were up to 7 or 8 minutes).

Now, in our very busy periods, we are down to under 3 minutes from the time of ordering to hand off to the customer, and I do not believe we can get much faster than that, and we have still maintained excellent quality, with friendly, fast, efficient service.

People talk about introducing other brew methods such as siphon or pour overs, this is all well and good, but will it create a fast and efficient service process? It will take very good, skilled baristas and allocated counter space to do so. It is possible, but wil it be cost (labour especially), effective?

If Kaffeine 2 ever arrives, perhaps we will then look at counter space and brew methods, but until then, at Kaffeine, we are staying with what we know, espresso.

Week beginning November 22nd - Thanksgiving and Office Catering

Breakfast meetings, fruit platters, morning tea, lunch baguette and foccacia platters and afternoon tea. If you require catering for the office, then all of the food and drink items that are on the menu is able to be delivered, or picked up, so that you can enjoy all of Kaffeine's menu without having to leave the office.

Week beginning November 18th - A Dinner Speech

This week I have been asked to speak at a business dinner for over 110 guests at the HSBC headquarters at Canary Wharf. HSBC were the bank that were kind enough to back Kaffeine when I approached them, in the middle of the recession, with a visual presentation, a business plan and a lot of determination.

I can see their problem when they are approached by people wanting to 'follow their dream' and they say no and decline the application for a loan. Is it because of the lack of experience the applicant has? Most probably. Is it because of the lack of detail and passion shown in the business plan? Again, most probably. I can only say that you must of course follow your dream, but be absolutely sure that it will not turn into your nightmare.

I try to say his as humbly as possible, but I have over 20 years experience in the Hospitality industry. I am not a chef, I am not a barista and I am not at all perfect, but, one of the reasons HSBC did back me in the end was because of my experience, and in a world/industry of such hard, and I stress hard, competition, it does count for a bit.

And because of this, they have now asked me to speak about it to over 100 business professionals at the head office of one of the biggest banks in the world.

It is a very nice compliment indeed. I hope I do well.

Week Beginning November 8th - European Coffee Awards - Best Independent Cafe

We are very happy little people at Kaffeine this week.... proud, humble and happy. This is because this week, after being open only 14 months, we were judged to be the Best Independent Cafe in Europe at the European Coffee Symposium and Awards, held in Rome.

Over 300 leading executives and coffee industry people voted in a survey held in August this year and we were shortlisted with the respected Monmouth coffee and Double Eye cafe in Berlin. Catherine our manager went to Rome (I could unfortunately not attend) for the black tie gala dinner and the conference the next day and has come home a winner with a beautiful trophy and a big smile.

I must say a very big thank you to the all the staff at Kaffeine for all their hard effort, passion and enthusiasm, as well as all of our valued customers who have supported us in some many ways and of course our family and friends for their belief in us from the start. This is truly a great honour to be recognised by industry peers in this way and we very much appreciate it. Thank you very much.

Week beginning November 1st - Super Nessie!

They say two heads are better than one, and it's the same story with Synesso machines as our two group was replaced by a three grouped Super Nessie on Tuesday night.
In an operation that required pizza, beer and two strong lads from Square Mile, the installation went smoothly despite confusion of where to locate Jerry (the Juicer). Our happy team of baristi are now throughly enjoying providing our lovely customers with amazing sweet smooth shots. Experimenting with both a slow flow and original steam tip has resulted in silky milk. We are also playing with metal, teflon and naked handles to find the perfect combination.
The Autumn espresso blend from Square Mile is coming through sweeter and cleaner than ever, the benefits of working with a brand new machine. Come in as soon as you can and experience absolute quality with a special double ristretto.

Week beginning October 25th - New Synesso week

Yes this is the week it arrives. Our new 3 goup Synesso Cyncra all brand new and shiny....Since our birth in August 2009, we have had a 2 group Synesso Cyncra machine. Catherine our manager has especially taken this machine to heart, naming her Nessie and polishing and cleaning her and taking absolute pride in every aspect.

When James Hoffman first came in for a training session, took the sides off and explained all the working parts, Catherine was there asking questions and taking notes.

When John Gordon came down to descale her and took her apart, Catherine was here taking photos of all the inside, taking more notes and asking questions about how everything worked.

People ask me how much she is worth (Nessie that is), and I can only say...absolutley. But I am also very lucky that I have baristas who are absolutley proud of the machine they work on, and that is worth a lot as well.

We will miss our Nessie a lot, but we are really excited about her replacement!

Menu Week Beginning October 18th - The rush of service

Honestly, I don't have too much to say this time....we had a very very busy week last week and I think I am still recovering. It is a credit to our wonderful staff who have not only set a standard that we are all very proud of, but also strive very hard to maintain those standards even when we are packed.

One of the things hospitality people often speak about is the 'rush of service', I have worked in catering for over 20 years and last week and the week before we had the 'rush', every day, all day. At 41 years old, that is bit hard to keep up with. But what a feeling!

Menu - Week beginning October 11th - 3 Group Synesso

We have are currently awaiting delivery of a new baby. A brand new shiny 3 group Synesso Cyncra espresso machine is on its way to London from Seattle to replace the two group one we have had for the past year. The support of all our regular customers has increased, and for that we are forever grateful, however, it also means we are very very busy.

Our current 2 group machine is just about not coping with the demand, and of course we are not getting the coffees out to you as fast as we (or probably you), wish, which is just not good enough.

We now have three baristas working pretty much every hour of the day, and with a new machine we will be able to release the pressure on the smaller machine, and also expediate the coffees faster to you, while still focussing on quality.

One more week to go and we will be very excited indeed. We hope you will be too.

Our old 2 group (Nessie), has been sold on, apparently to another London cafe. We will be visiting to say hello to her. She will be very sadly missed.

Menu - Week beginning October 4th

Okay, so here are a couple of things that have to be announced this week.

The first big one...Porridge. yes it is back, gradually day by day we have more people asking when are we bringing back our wonderful porridge.

October, good time for a start on this one we think. Oats, cooked with soy milk and water and a dash of salt then served with accompaniments of muscovado sugar, rhubarb and raspberry compote, dried fruit or chopped nuts or honey. Wonderful.

Next...Soup.. Warming Autumn time soups. Mushroom and Baby leeks. Can't wait for that one. This of course means tat winter is upon us but hey,. it also means that Christmas is around trhe corner and Mrs Kaffeine and I really love this build up time to Christmas in London. Lights, drinks, frivolity, excitement, steamy windows, scarves, big woollen jumpers, open fires, Sunday roast, great coffee. We love it.

Menu - Week beginning September 20th

Moroccan carrot baguettes are back on the menu this week. Cinnamon, coriander and cumin blended with peeled, boiled and grated carrots and then mixed together to create a lovely Moroccan spice filling that we put with an olive tapenade and haloumi cheese. Exotic? We like to think so.

Redcurrants, black peppercons, vinegar and sugar cooked down to a jam creates the base for the other baguette we have on this week. Many people ask us 'what is that flavour in the baguette?' when we put it on. A simple spread of this jam really brings out and adds to the flavour of the Italian ham and the brie cheese.

Menu Week Beginning September 13th

Damson plums come into season only for four weeks every year. Small, almost grape like in size and dark, dark purple in colour they have a tartness on the tongue when eaten fresh, but when they are cooked into a tart, slice or muffin, the sweetness comes out and they show their true form. This week we are simply baking them into our sweet muffins. Nice.

Menu - September 6th - Specialty Food Fair

The Specialty Food and Chocolate Food Fair is being held as we speak. Sunday 5th, Monday 6th and Tuesday 7th out at Olympia with over 550 individual exhibitors. We went out yesterday and had a good look around and it was amazing and inspirational.

Not just seeing our own suppliers such as Tea Pigs and Villanova, but also seeing the range of food and beverage avalable from many small independent suppliers. People who are all passionate about their business, who believe that their products is or will be one of the best and that there is a market for it.

As one of those small independents (though not exhibitng) I have a lot of respect for those who put in all the hours, reasearch, commitment, lack of sleep, money, passion, enthusiasm and belief. Plus, it is amazing to see how many options there are out there!! It is astounding where the food industry has come over the past 20 years in the UK, and it can only get better. I saw a quote out there "it is better to have eaten, than to eat". My sentiments exactly.

We are very excited this week because we have discovered that we have been shortlisted for the annual Time Out Eating and Drinking awards in the category of Best Coffee in London. Our competition is fierce, with the Espresso Room, Prufrock Coffee & Tapped and Packed also in contention.

Menu August 23rd

Blueberry season!! We could not get them in time last week, so we went for Fae berries instead, which are a cousin of the gooseberry. Very popular they were too, sort of a cross between a grape and a cherry.

But now it is time for blueberries, put them in a muffin, have a happy day...guaranteed. I have been waiting for this moment all year.

We have also been making jams this week. Raspberry jam, we think some of the best yet, plus our famous carrot and lemon marmalade and also greengage plum jam which is really really suprisingly good, so good it even surprised us. These jams are amazing on our seven seeded bloomer toast. Mornings are sorted.

A year ago we were in the middle of the renovations for Kaffeine. I had just finished at my old job at Lord's Cricket ground after England won the Ashes and in the first week away from the comfort of employment, I think I had 8 hours sleep over four days.

Now we are almost a year old and my my my the time has flown. I want to take this opportunity to thank everyone involved, all our valued customers, my most valuable staff, our suppliers and most of all my wife and family for all your confidence, encouragement and support.

Menu week beginning July 19th

The summer blend from Square Mile is really hitting its spot these days. All it says on the packaging plus more. We are very happy with it and, although we really try to promote short, black coffee such as ristretto or espresso, it really is coming through nicely with milk as well.

Customer feedback has been excellent, with comments such as 'this is the best ever blend' or 'I am really liking this coffee'. Square Mile roasters, plus Synesso Cyncra plus talented baristas. Perfect.(And the food to go with it is pretty good too.)

The world barista championships are almost upon us and the coffee world is getting excited. As a way of helping to cope with over 10,000 coffee geeks hititng town and wanting to drink coffee all day, we will be extending our opening hours over that entire week.

Menu - 24th May - Here comes the sun

What a difference the sun makes. Waking up at 4:30 am to get into the kitchen for 6 am is no longer a struggle, waking out to get the bus is a pleasant experience, not a nightmare. Produce is fresher and will only get better as the season progresses, going home in daylight and still having time to enjoy it is a joy.

You feel like you can get so much more done! It is no longer a struggle to put in 8 hours, but is much easier to put in 14 or more.

Of course you know all this already, but I thought I would remind you. Try getting up really early and going for a long walk before everyone else gets going. The sunrise as it hits the building and the peace of no traffic or people is truly wonderful. London is a beautiful city, especially when it is quiet.

Then come in for breakfast, read the paper, have a fruit salad or freshly baked muffin and a coffee. The day is sorted. No better way to start.

Menu - 17th May

Exciting times ahead for espresso coffee and coffee in general in London. Penny University opens up this week and the buzz is starting in relation to the World Barista Championships in June.

Penny's (as I will now call it) is a project by Square Mile coffee which will focus on all things coffee, except espresso. I cannot say too much at the moment, but with an opening this Saturday , the Sqaure Mile posse have been very very busy indeed.

The great thing about this is that it will bring more media and consumer awareness of independant and quality coffee offerings in London, and hopefully, as mentioned in last weeks blog, truly bring London to being the worlds leading coffee city.

WBC 2010 will also help do this. I found out last night that David Schomer, as well as of course over 50 barista champions will be coming to town for the last week of June

Menu May 10th - Financial Times Article

Today we are very happy because the Financial Times has written a wonderful piece about coffee in London and in particular, Kaffeine. This is a proud moment for us all, as we have worked very hard to create a special place in London for coffee and food, and to have such a reputable newspaper acknowledge this is high praise indeed. We are very grateful.

It is also great to see the mainstream media putting out a positive review about a growing and exciting industry. Having the media back independents in this way is also much appreciated. This is how the industry grew so well in Australia, and if it helps create more independent cafes in opening because this media attention and also a greater consumer demand for better quality espresso drinks, then London really will become the coffee capital of the world once again. We can only keep working at it.

Office catering is something we get asked about quite often and we already supply some very good clients across Fitzrovia. If you are interested in office catering the menu is available on the website. We can do everything that we make on the menu here, and offer special rates if you are after breakfast or lunch package including wonderful fruit platters.

The new Spring Espresso coming through the synesso is continuing to be very popular, customer feedback is excellent. It is a bit lighter than winter, as it should be, and is a wonderfully balanced drink especially with milk. We love it.

Menu 12th April - Spring Espresso hits the streets

The ever excellent Square Mile coffee roasters have released this week their new spring blend espresso. As you may know they release a new blend every season, and after a wonderful time with their winter blend and getting hazelnuts, marmalade and even raspberry on the palate, we are now looking forwrad to a new and exciting flavour profile.

This blend we are told will bring through a lighter mouthfeel then the winter. There is an intense sweetness and creamy body to the espresso, with notes of black cherry, dark chocolate and roasted hazelnuts with a lovely flavour of blackcurrant on the nose and finish.

With milk we can expect notes of chocolate, toasted nuts, caramel and a strong, clean sweetness.

How good is that!!

Chef Jared and Piotr have also come up with another delicious menu this week. We hope to see you in and enjoying.

Menu 29th March - Easter week

This week is a short week, and we are really looking forward to a bit of a break. Easter week brings back so many memories of travelling around Europe, especially in Italy, France and Malta with all the religious ceremonies but also importantly, families and friends catching up together and feasting on all sorts of good food. Yum.

We will be closed for the Easter weekend. Friday, Saturday, Sunday and Monday to be away with Mrs Kaffeine and baby Layla, eating loads and spending quality time together. Perfect.

Menu - March 22nd

Hello all, we went to the fabulous Columbia Road market on Sunday and it was amazing (and reassuring) to see all the spring flowers on sale down there. We love Columbia road and though it gets packed from 10 am onwards, it's great to get there either at the start or at the end of the day. Finish that off with a breakfast baguette and flat white at the excellent Taste of Bitter Love on Hackney road and the day is sorted. Sundays? Done.

Lamingtons are an Australia/New Zealand traditional cake. Perfect in the afternoon with a pot of tea or perhaps a latte, they are two pieces of sponge, covered in chocolate, or maybe raspberry jelly crystals and then coated with coconut. Two pieces are then sandwiched together with cream in the middle. We make them fresh every day, so limited amounts available. Get them while you can.

Menu - 1st March - UKBC Champion John Gordon

We should have posted this menu last week, but I wanted to wait to see how the UK barista championships ended on Monday. Our own Estelle Bright did an amzing job and finished just outside the top 6 at number 8. She is the number 1 female barista in the UK overall, a fantastic achievment and something we are very proud of.
We are also very very happy to say that John Gordon, originally from Australia but now representing the UK, came out overall UK champion late on Monday. For an insight into how John works as a barista, check Kaffeine the movie on our website.
John, full respect not just to you but all baristas who entered, a job very very well done.

UK Barista Championships Week - February 22nd

Hello all,
We have very very good news. Estelle Bright, our barista from Abergavenny in Wales is currently placed 7th out of the whole of the UK going into the semi finals for the UK Barista Championships. The semi finals will be held at the Hotelympia exhibition this coming Sunday, in front of a potential 2,000 people. If Estelle gets into the final six, she will compete on Monday the 1st March for the title of best in the UK, then represent the UK in the World Championships in June.

Estelle has put a lot of hard work into her competition this year, we have had three practice sessions with guest judges and audience and Estelle has been staying back most nights to practice, practice, practice.

The man who features in Kaffeine the movie, John Gordon, is currently placed 6th in the UK, will also be in the semi finals and also has a very, very good chance.

For Kaffeine to be connected to these two star baristas is humbling. We wish them all the very best.
