Week beginning September 28th - London Latte Art Smackdown - Heat 4

It is the last week. Heat four of the London Latte Art Smackdown before we head off to Square Mile for the final with the top 16 baristas competing for prizes, money, trophies and glory. This will be fantastic, with an amazing cross section of competitors form across the top London cafes competing for the last four places to get in amongst it.

Last week in heat three, we had Tim 'Styles' Williams, one of the true legends of the London Coffee scene alongside last years winner David Urbinati form Artisan Coffee as guest judges, with our usual lead Judge and photographer Glenn Watson assessing the quality of the pours.

We even had Giovanni Fucilli form Victoria Arduino in the crowd checking on the pours and also how the Black Eagle was performing under all the pressure of making shots and steaming milk. Considering it is the World Barista Competition Espresso machine, it performed very well.

In the end, it was these four who got through to the final at Square Mile on the 6th October.

Laura from Curators
Piotr from the Peanut Vendor

Week beginning September 21st - London Latte Art Smackdown - Heat Three

This week we move into heat three of the London Latte Art Smackdown and as expected, the pressure is rising each week as we witness the fitness (sorry) of the baristas of London and their skills, steady hands, passion, enthusiasm and care for their coffees and the coffee industry. It is brilliant to watch.

Last week in heat two, Eastcastle street was once again packed to the hanging lights with supporters all drinking our cheap beer and cheering on the competitors as they battled each other to get through to the finals. We had James Hoffman from Square Mile Coffee and the author of the World Coffee Atlas, Ben Townsend formerly of Espresso Room and our usual lead Judge and photographer Glenn Watson assessing the quality of the pours.

In the end, it was these four who got through to the final at Square Mile on the 6th October.

So Yan - Attendant
Chloe - Kaffeine
Dean - Artisan
Nico - Noble

We also had great news in that Victoria Arduino, the makers of the Black Eagle espresso machine, are also sponsoring the event with prizes and trophies as well as the crew from Minor Figures with supplies of the brilliant Cold Brew coffee.

This week we have baristas from the following:
Attendant
Curators
Department of Coffee and Social Affairs
Timberyard
Prufrock
Kaffeine
Gails
Store Street
Notes and
Piotr the Peanut Vendor

Judges for this week are Glenn Watson, last years winner from Artisan David Urbinati and someone formerly from St Ali and Seven Seeds in Melbourne who has seen the London Coffee scene since early 2005 when he was a barista at Flat White, then going onto Climpson and Sons, then in key roles at Intelligentsia in Los Angeles, Square Mile in London and then Workshop, now with his own company in coffee sourcing, Tim 'Styles' Williams.

Heats start at 7:30 pm, entry is from 7 pm, beers are £2 each and you are welcome to come along and support your staff or check what is happening.

What a great night the first heat was. 16 baristas, three world class judges, probably the best espresso machine in the world, £840 in cash to win plus prizes from Square Mile, Coffee Hit, Minor Figures and Victoria Arduino as well as the simple, stunning glory that comes with winning. The pressure was on, and this was just to get into the finals.

Check out these amazing photos from lead judge, Glenn Watson.

Week beginning Tuesday September 1st - London Latte Art Smackdown 2015

It is back, for the third year now and it is even more popular than before. The London Latte Art Smackdown, sponsored by Square Mile, Coffee Hit and Kaffeine, runs over five weeks starting with four rounds of heats from Tuesday the 8th of September and finishing on Tuesday the 6th October at our new store on Eastcastle street, with the final in the event space at Square Mile Coffee Roasters.

It is pretty simple. 48 spaces, £10 entry, maximum of four entries per company, 12 entrants per heat, knock out rounds to get the top 3 to go through to the final, making another 12 competitors for the finals.

The rules: They get tighter each year, but again we keep it simple.

A Kaffeine barista will be pouring double shots for you into 2 x 5 oz 'flat white' Acme cups.
You steam your milk and split your jugs.
You pour your preferred pattern, but we only allow rosettas, tulips or hearts.
Cup handle must be presented to the right of the judges, with the base of the pattern at 6 o'clock
You choose your best looking and presented drink and put it forward for consideration
You pour your left over milk into a glass to measure your 'wastage'
You remove your second drink.

The barista you are battling against then goes through the same process and the judges will then confer.

The judges, who include some of the complete legends of the London Coffee Scene are looking for:
Consistency
Colour
Symmetry
Dribbles (or lack of)
Milk wastage
Fullness of the cup
Formation of pattern
and many other things that they make up as they go along.

The judges, of which there are three, will then make a decision and on the count of three, point to the winning cup.

The winner goes through to the next round.

The prizes? Well all entry money goes into the pot, so that's £480. The Allegra World Coffee Portal have kindly put in £200, so that is £680 all up in cash. Coffee Hit have donated 1 x Baratza Grinder and a Rhino Hand grinder for 2nd and 3rd and Square Mile will be organising trophies and even more prizes, not to mention the glory and accolades and hopefully a bonus from your employer that comes with it.

The judges? Jeremy Challender from Prufrock, James Hoffman, Oli Bradshaw and Marty Latham from Square Mile, Phil 'the bass player' Wain, Ben Townsend formerly of Espresso room, Andrew Tolley from Taylor Street Baristas, former winners James Bailey of Workshop and David Urbinati of Artisan, Tim Williams formerly of Workshop and now of Coffee Sourcing and lead judge for the third year, Glenn Watson.

Spaces are filling fast already, with most spaces on the first heat already gone. To get involved, the best way is to come into our Eastcastle street and say 'I'm want to compete' and we will help you out.

At the heats, we will have light snacks for free and cheap beers available to purchase if you so desire and Square Mile are already in talks with one of London's iconic beer suppliers for the finals. Guests are welcome to watch and to support you on your way.

Any queries, please email me direct. It's going to be brilliant, we look forward to seeing you.

Week beginning July 20th - Opening the second store - The snowball effect

It started a long, long time ago. That is, thinking about opening a second store, though certainly nothing serious. Then we found out Layla was going to have a baby brother or sister so all those potential plans were put on hold as a very conscious decision that this time, it was all about the family.

Then in 2013, Christian arrived, and he was about 6 months old when I was playing with him and I looked in his eyes and thought, 'okay, let's go.'

This is what I would call the very, very start of a very, very large snowball in the lead up to opening a new business. (or a large scary storm, but a snowball is nicer).

Because once that conscious decision was made, then all the steps start to take place. They start slowly at first, gaining momentum, getting faster and faster as the process moves along, until the final end of it when you (hopefully) open the doors and you've made it.

It starts with writing the business plan at night, and searching for properties through the day, either walking the streets, or signing up to numerous estate agents email alerts, or checking websites. Then it is planning the equipment, the costs, the potential revenue, the expenses, the staffing, the menus, the decor, the fit out, the builders, the designers. Then it is applying for funding, if you need to, and making sure all your necessary documents are in place and going back and forth, back and forth, back and forth.

Then funding is approved, or it is rejected so you work on it again, then it is approved, then you find a site, then you apply, present to the landlord, they accept, you go to solicitors, negotiate the lease, go back to the solicitors, again, and again, and again and you finally get the keys and the builders are ready and the designers are set and the fit out begins and the pressure starts to rise then all the smaller, in many cases really important decisions, start to mount up as the snowball (or storm) starts to get bigger and bigger and you are not even open yet and then there are more decisions to make and things to plan or problems to solve or staff to organise and recruit and interview and induct and then the builders say, 'um, we have a problem' then most people in the process say 'um, we have a problem' and you have to deal with it as you have to deal with everything as the snowball gets bigger and the storm gets wilder but you are all calm and collected because your detailed planning is detailed and planned and there is no going back now and anyway, that which does not kill you makes you stronger.

Then what I call the critical path analysis, with all your critical dates and important things to do is pretty much left alone as the snowball is singing 'don't stop me now! I'm having a good time, I'm having a ball' and is going absolutely full pelt down the path taking everything with it and you have just a few more weeks or days to go and it is all coming into place but every decision you make (and there is SO, SO many), is just making the snowball get bigger and bigger and then you finally, after all this, open. Phew.

It is seriously massive. This giant snowball has caught you up in it's path and then finally throws you out to the wild.

18 months later 15 Eastcastle street opened and Christian had just turned 2.

It really is quite a ride. Seriously quite incredible. Then all you have to do is operate it and not stuff it up.

Note: Another post altogether is about the SO, SO many decisions you have to make and the actual/possible consequences of these decisions.

Please enjoy the menu for this week, as we will enjoy bringing it to you.

Week beginning July 13th - The Ashes

So very excited this week, it is the return of the Ashes with England vs Australia at the Home of Cricket, Lords Cricket Ground. If you have been following, you will know that England have just won the first test in Cardiff and so I am quite sure they will be full of confidence coming into this game, as will all the England supporters.

It is going to make the atmosphere at Lords all that more special and exciting. It also marks the 6th year anniversary since I left the Club to open Kaffeine. The Ashes in 2009 was my last match there before I left on July 25th and opened Kaffeine on August 14th.

This season we are back in the Harris Gardens, the premier outdoor dining area and Veuve Cliquot champagne bar of the ground, tucked in behind the members stand, just up from the WG Grace main entrance. We will continue to do bulk brew filter coffee and have upgraded this year to a 3 group Simonelli and Robur grinder for our espresso to be able to cope with the high demand.

The other amazing news is that we have also signed a contract to provide espresso and filter coffee in the iconic Media Centre to over 200 journalists and photographers, broadcasters and commentators. We started here for the first test against New Zealand and had a fantastic time with amazing feedback. We cannot wait to get back in there this game and provide the media with much needed espresso for their long days.

It is a long day indeed. We get there about 6:30, the club will open the gates at 8:30 am, perhaps even earlier, then in the Harris we get properly hammered busy until just before 11 am when all the crowds have dispersed into the ground to watch the 1st ball. From then the Harris turns into a 150 cover restaurant which will have been booked out for months in advance and we will provide espresso coffee to have with lunch and afternoon teas until about 5 pm.

In the media we will also be there from 6:30 am, with the media arriving from 7 am to get set up for the day and we will then be very busy again until just before 11 am, then will remain steady until closing at 6 pm.

So if you are in the ground for the match, please do try to come see us in the Harris Gardens and please make sure you say hello. If you are only able to listen to the radio, watch it on Sky or watch the highlights on Channel 5, please think of us when you see the media centre.

We would like to generously thank very good friends at Coffee Hit and at Square Mile for all their support with equipment, plus a big thank you to all the Kaffeine staff who work so very hard over this time. It is a very special time.

Below are the menus for this week for both stores, please enjoy, as we will enjoy bringing them to you.
