If you lose 100 shots worth of coffee at say 50p per 19 gram dose, all you are losing is the cost price of the coffee, e.g. £50. The selling price of the wastage is irrelevant since as long you are managing to serve every customer who walks through the door, you are not losing any revenue. So I think you are over-estimating the loss by a factor of 5. [An alternative way of looking at this is to imagine opening a new £20 kilogram of beans and tipping it immediately into the trash.
